The Hows and Whys of My Campus Food Intrests

As an IUSB student I have found that I benefit from my campus life as well as my at home life due to the services offered through our Titan Food and Dining Service options, as well as the options available through the Titan Food Pantry.  

As I was browsing though the pantry for a class assignment I was able to find enough ingredients to make some very hearty home cooked meals that a family could love and appreciate.


 One of my favorite recipes was one that I had recently made at home (added below). Chicken & Mushroom Gravy over Long Grain Rice.  I loved it.  My three children loved it as well.  I hope that you will try it

I encourage everyone and recommend all the campus food choices to promote a healthy and enjoyable IUSB food culture experience.  With my main career goal being to write about food and food culture I enjoy all forms of engaging with foodie topics.

Whether it be criticism or optimism, from experience to expertise (or the lack there of, for that matter), I think this could be very fun, indeed.

Chicken & Mushroom Gravy Over Long grain Rice

Ingredients:
  • 1 can of canned boneless chicken breast
  • Two cans of cream of mushroom soup
  • 2 cups of cold water
  • 4 tablespoons of cornstarch
  • salt
  • Pepper
  • 2 tablespoons of butter



Directions:
  1. In deep skillet over low-medium heat melt butter.
  2. Open and empty both cream of mushroom soup into skillet.
  3. Cook on Medium-low and bring to slow boil.
  4. Mix water and cornstarch in a separate dish/cup until the cornstarch is dissolved.  Adding more cornstarch will give your gravy thicker consistency.
  5. Pour water and cornstarch mixture into boiling soup.
  6. Turn down heat so that the soup can simmer this will cause the soup to thicken, becoming a gravy.
  7. As you’re waiting for your soup to thicken prepare your long grain rice (see “How to Make Long Grain Rice.).
  8. Once rice starts simmering for 18 minutes open can of canned chicken breast.
  9. DO NOT DRAIN CHICKEN BREAST
  10. Add chicken to mushroom soup gravy, cover and let simmer on low.
  11. Add salt and pepper to taste.


Serve Meal:  Place cooked rice on plate and pour chicken and gravy over rice. Enjoy!
